Cut and Come Again Fruit Loaf Recipe

110g butter
110g caster sugar
2 eggs—beaten
175g self raising flour
1/2 tsp baking powder
175g mixed dried fruit (raisins, currants, sultanas, mixed peel and glace cherries)
A little milk

Line 18cm square cake tin with baking parchment
 

Cream together butter and sugar then add the beaten eggs.
 

Sift the flour and baking powder together, then fold into the creamed mixture.
 

Add the dried fruit and enough milk to make a fairly soft mixture.

 

Place into the tin and bake for 35-40 minutes at 350oF/180oC or until nicely brown and firm to the touch.
